2/3 cup sweetened coconut flakes
2/3 cup panko
1/2 cup finely chopped pecans
1 1/2 pounds chicken breast (or chicken tenders)
- Preheat oven to 350 degrees and grease a cookie sheet.
- Put yogurt in a shallow dish and combine the coconut, panko and pecans in a different one.
- Dip the chicken in yogurt to cover, then roll in panko mixture.
- Place strips on cookie sheet and cook for about 45 minutes or until chicken is done.
